Khurma Recipe
Ingredients
- For the Khurma:
- 1 cup vermicelli
- 1 cup milk
- 1/2 cup sugar (adjust to taste)
- 2-3 tablespoons ghee (clarified butter)
- 1/4 cup chopped nuts (cashews, almonds, pistachios)
- 1/4 cup raisins
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- 2 cups water
Instructions
- Roast Vermicelli:
- In a pan, heat ghee over medium heat. Add the vermicelli and roast until it turns golden brown, stirring constantly to prevent burning.
- Add Water and Cook:
- Once roasted, add 2 cups of water. Bring to a boil, then reduce the heat and let it simmer until the vermicelli is cooked and the water is mostly absorbed (about 5-7 minutes).
- Add Milk and Sugar:
- Pour in the milk and mix well. Add the sugar and stir until dissolved. Let it cook for another 5 minutes until it thickens slightly.
- Add Flavorings:
- Stir in the cardamom powder and saffron strands (if using). Mix well.
- Add Nuts and Raisins:
- In a separate small pan, heat a little ghee and fry the chopped nuts and raisins until golden. Add them to the khurma and mix thoroughly.
- Serve:
- Serve warm or chilled, garnished with extra nuts if desired.
Tips
- You can adjust the sweetness by modifying the amount of sugar.
- For added flavor, you can also incorporate a splash of rose water or a bit of condensed milk.
