Khurma Recipe

Ingredients

  • For the Khurma:
  • 1 cup vermicelli
  • 1 cup milk
  • 1/2 cup sugar (adjust to taste)
  • 2-3 tablespoons ghee (clarified butter)
  • 1/4 cup chopped nuts (cashews, almonds, pistachios)
  • 1/4 cup raisins
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • 2 cups water

Instructions

  1. Roast Vermicelli:
  • In a pan, heat ghee over medium heat. Add the vermicelli and roast until it turns golden brown, stirring constantly to prevent burning.
  1. Add Water and Cook:
  • Once roasted, add 2 cups of water. Bring to a boil, then reduce the heat and let it simmer until the vermicelli is cooked and the water is mostly absorbed (about 5-7 minutes).
  1. Add Milk and Sugar:
  • Pour in the milk and mix well. Add the sugar and stir until dissolved. Let it cook for another 5 minutes until it thickens slightly.
  1. Add Flavorings:
  • Stir in the cardamom powder and saffron strands (if using). Mix well.
  1. Add Nuts and Raisins:
  • In a separate small pan, heat a little ghee and fry the chopped nuts and raisins until golden. Add them to the khurma and mix thoroughly.
  1. Serve:
  • Serve warm or chilled, garnished with extra nuts if desired.

  • You can adjust the sweetness by modifying the amount of sugar.
  • For added flavor, you can also incorporate a splash of rose water or a bit of condensed milk.
