Aloo Gajar Recipe

Ingredients:

  • 2 medium potatoes (cubed)
  • 2 medium carrots (sliced)
  • 1 medium onion (finely chopped)
  • 2 tomatoes (pureed)
  • 2 green chilies (slit)
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan and add cumin seeds. Let them crackle.
  2. Add chopped onion and sauté until golden brown.
  3. Stir in ginger-garlic paste and green chilies; cook for a minute.
  4. Add tomato puree, turmeric, red chili powder, and coriander powder. Cook until oil separates.
  5. Add potato cubes and sliced carrots. Mix well and sauté for 2-3 minutes.
  6. Pour 1 cup of water, cover, and cook for 8-10 minutes until vegetables are tender.
  7. Add garam masala and salt. Stir well and simmer for another 2 minutes.
  8. Garnish with fresh coriander leaves and serve hot with roti or rice.
