Aloo Gajar Recipe
Ingredients:

- 2 medium potatoes (cubed)
- 2 medium carrots (sliced)
- 1 medium onion (finely chopped)
- 2 tomatoes (pureed)
- 2 green chilies (slit)
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan and add cumin seeds. Let them crackle.
- Add chopped onion and sauté until golden brown.
- Stir in ginger-garlic paste and green chilies; cook for a minute.
- Add tomato puree, turmeric, red chili powder, and coriander powder. Cook until oil separates.
- Add potato cubes and sliced carrots. Mix well and sauté for 2-3 minutes.
- Pour 1 cup of water, cover, and cook for 8-10 minutes until vegetables are tender.
- Add garam masala and salt. Stir well and simmer for another 2 minutes.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
