Here’s a simple Chinese fried rice recipe:

Ingredients:

  • 2 cups of cooked rice (preferably day-old)
  • 2 tablespoons of vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions:

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
  2. Add the chopped onion and garlic, sauté until fragrant and slightly golden.
  3. Push the onion and garlic to one side of the pan, then pour the beaten eggs on the other side.
  4. Scramble the eggs until cooked through, then mix with the onion and garlic.
  5. Add the remaining oil and mixed vegetables to the pan, stir-fry for 2-3 minutes.
  6. Add the cooked rice, breaking up any clumps, and stir-fry everything together.
  7. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Mix well to coat the rice evenly.
  8. Season with salt and pepper to taste.
  9. Stir-fry for another 2 minutes until everything is well combined and heated through.
  10. Garnish with chopped green onions and serve hot.
